A Better Way To Go Green…

There’s an innocent little herb you see all the time, but probably never think about. When you go to a restaurant, it’s often right there on top of your salmon or steak. It’s also sprinkled on hundreds of side dishes…

You almost never notice it because it gets chopped up to make salad dressing, soup stock and rice dishes. Or it gets mixed in and added to meatballs, stuffing or even dry rubs for barbeque.

I’m talking about parsley.

Parsley didn’t always go so unnoticed. Greeks used parsley to crown winners at competitions and to decorate tombs. Hippocrates, the father of Western medicine, used it for many remedies. And emperor Charlemagne helped popularize the herb in Europe by cultivating it in his gardens.

It’s also been used as a hair rinse, a facial cream and a kind of breath mint.

But did you know that parsley has three times as much vitamin C as oranges? Or that it has twice as much iron as spinach? It also has high levels of vitamin K, vitamin A and folate.

In fact, there are dozens of other plants and herbs filled with nutrients we are ignoring in our modern world.
